The first part of this article contrasts the Philippine and Japanese ways of food preparation in terms of their representation of the wild in nature, with the Japanese tending to focus on enhancing food presentation and appearance, while the Filipinos tending to conceal/downplay the ‘wildness’ of food taste. The second part, presented in contrast to food in urban Japan, is an exposition on the traditional subsistence-oriented food production system, based on the root crop culture that is still alive in, for example, Batanes, Philippines.
